Esker Raspberry Collins

Raspberries and Lemon combined to make a sweet but zingy collins. Refreshing and tasty!

INGREDIENTS

  • 50ml Scottish Esker Scottish Raspberry Gin

  • 15ml Sweet Vermouth

  • 20ml Fresh Lemon Juice

  • 10ml Sugar Syrup

  • Three Fresh Raspberries (plus extra for garnish)

  • Dash Soda

METHOD

Muddle (squish) your raspberries in the bottom of a cocktail shaker then add all other ingredients (EXCEPT SODA) and shake with ice. Double strain into a highball glass and top with soda. Garnish with fresh raspberries and a lemon twist.
