Raspberry Gin Mojito

A fruity version of the Mojito using our Scottish Raspberry Gin!

INGREDIENTS

  • 50ml Esker Scottish Raspberry Gin

  • 25ml Fresh Lime Juice

  • 12.5ml Sugar Syrup

  • Three Fresh Raspberries (plus extra for garnish)

  • Dash Soda Water

  • 8 - 10 mint leaves (reserve a sprig for garnish)

METHOD

Start by muddling the raspberries directly in the bottom of a tall (sturdy) glass. Then add all ingredients (EXCEPT SODA) to your glass. Gently clap the mint to release the aromas, being careful not to bruise it. Add crushed ice and churn using a spoon. Top with a dash of soda and garnish with a sprig of mint.
